Beyond The Dough: A Pizza Paradise in Bugis

Beyond The Dough, a new pizza haven nestled in Bugis along Arab Street, has opened its doors, promising a unique pizza experience crafted by renowned pizzaiolo Eddie Murakami. Joining Eddie in this culinary adventure is Shinji Yokota, a Tokyo-born entrepreneur known for his successful ventures.

A Cozy Haven for Pizza Lovers

This intimate shophouse restaurant boasts a cozy atmosphere, comfortably seating 28 diners. The space is thoughtfully designed with a mix of tables and counter seating, allowing you to witness the pizza-making magic unfold before your eyes in the open kitchen.

A Taste of Tokyo Neapolitan Pizza

The menu at Beyond The Dough features an array of pizzas, each crafted with meticulous attention to detail. Their pizzas are made in the Tokyo Neapolitan style, utilizing high-quality ingredients like Japanese flour, specially filtered Japanese water, Okinawan salt, and an exclusive olive oil imported from Italy. Every pizza is prepared freshly upon order, ensuring each bite is bursting with flavor.

An Appetizing Journey

Beyond the pizzas, you’ll find a selection of cold and hot appetizers to tantalize your taste buds. I kicked off my culinary adventure with the Assortment of 3 Appetizers, a chef’s selection of fresh, seasonal starters presented in an omakase-style manner.

For a warm and comforting start, the Homemade Lasagna is a must-try. Served in individual portions, this small pot of layered pasta, meat, and cheese is a delightful treat.

A Spicy Surprise: The Singapore Rampage

A unique flavor that caught my eye was the Singapore Rampage, a tribute to Singapore’s love for spice. This pizza features a delicious gravy made from over 100 prawns, simmered for 20 hours with chilli, garlic, and basil. While not overly spicy, the gravy packs a powerful punch of flavor.

A Symphony of Cheese: The 5 Formaggi

My personal favorite is the 5 Formaggi, a masterpiece of cheese-loving dreams. This pizza features a harmonious blend of five types of cheeses, including mascarpone, smoked cheese, blue cheese, pecorino, and parmigiana. A touch of sweetness is added with a side of special Italian honey for a perfectly balanced flavor.

Classic Italian Flavors

For those craving traditional Italian flavors, the Margherita is a classic choice. This simple yet satisfying pizza is topped with tomato sauce, basil, and cheese, offering a taste of Italy on your plate.

The Diavola adds a touch of spice with its tomato sauce, basil, salsiccia, olives, and cheese, creating a vibrant and flavorful pizza. While I enjoyed all the pizzas I tried, the Margherita felt a bit predictable compared to the others.

Intimate Ambiance with a Slight Drawback

The restaurant’s intimate setting, accommodating only 28 guests, can pose a challenge for larger groups. If you are planning a gathering of more than six people, you might find yourself splitting tables.

A Culinary Adventure Worth Taking

Overall, Beyond The Dough is a must-visit for any pizza lover in Bugis. While the prices are slightly higher than your average pizza joint, the quality and uniqueness of their pizzas make it worth the splurge. I recommend visiting with a small group to sample the diverse range of flavors and discover your own favorite pizza.
